1/2 cup milk (or more, depending on how much fish your cooking)
2 teaspoons salt
fresh or frozen fish fillets, completely thawed and drained
1/4 cup fine dry bread crumbs/per pound of fish
1/4 cup grated Parmesan cheese/per pound of fish
melted butter or butter flavored cooking spray
Preheat oven to 375° and butter your baking dish.
30 minutes before you’re ready to start, blend together the milk and salt in a shallow bowl and soak fish.
In another bowl, combine bread crumbs, Parmesan cheese, and maybe a sprinkle of paprika.
Drain fish.
Roll fish fillets in crumb mixture.
Arrange in baking dish. Drizzle with a little melted butter or spritz top with cooking spray.
Bake 25 to 30 minutes, depending on thickness of fillets.
Fish should flake easily with a fork when done.
Notes:
~ Use your favorite fish. Sole, Haddock, Talapia, Orange Roughy, Cod…
~ For those of you who don’t like a ‘fishy taste’, soaking your fish in milk for 30 minutes draws out that fishy taste!
